mmm... pineapple water

Agua de Pina

Use 1/4 pineapple per pitcher.

Cut up pineapple and boil.

Put in pitcher and add enough water to fill to top

Add 1 c of sugar (or to taste) and chill.

Papa a la Huancaina

For 8 people

8 yellow potatos

8 leaves of lettuce

8 black olives

8 pieces of corn

2 lemons

2 unseeded peppers

1 onion

250 grams of fresh cheese

1 cup of oil

1/2 cup of evaporated milk

1/2 tsp palillo molido (for color)

Salt and pepper

Boil the potatoes, peel and cut in half, put with lettuce. Mix cheese and peppers in a blender. Add milk, palillo, salt and pepper. Cook over low heat, constantly stirring. Cover the potatoes and lettuce in sauce and decorate plate with corn and onions. Cool and serve.

Chifa (peruvian+chinese)

Tallarin Saltado

For 4 people

500 grams of chow mein noodles (the soft ones)

250 grams of beef

3 pieced of green onion

3 tomatoes

2 red onions

Soy sauce

Salt

Oil

Cook noodles with salt/ . Fry beef with oil, add sliced onion, sliced tomatoes, and chopped green onion. When cooked, add soy sauce and salt. Add noodles and mix.

Brown ground garlic in a little water

Add sliced onions

Sliced tomatoes

Corn

Potato

Add chicken into small pieces

Then veggies of your choice

Carrots

Peas

Chopped green beans

Then add oregano and lemon for flavor

serve over rice.

Lomo Saltado (one of my personal favs)

Lomo Saltado

For 6 people

500 grams of beef loin

250 grams of onion

3 white potatoes

3 tomatoes

1 fresh pepper

3T vinegar

1t. Ground garlic

Cumin

Oregano

Salt and pepper

Cut up the meat into small pieces, fry in oil. Remove from frying pan. Cut potatoes into the shape of french fries and cook in the same oil. Take out potatoes and add salt, pepper, cumin, garlic and oregono to the oil. Add the cooked meat and cover with sliced onions and sliced pepper. Stir and add vinegar, cover and let cook on low heat. When the meat is tender, add the fried potatoes and tomato wedges. Stir slowly to warm up the potatoes and to mix the tomatoes; Can be served with rice.
